My parents probably checked German(I was only like 14 in 2012 when this was done) but I am probably as much English and Scotts-Irish (British descended protestants in Northern Ireland). Just keep that in mind, German is the one that stands out more so people are more likely to choose it. You know, it's actually an uncertain shitshow. New Mexico (the state) was land that was ceded to us by Mexico, obviously, as part of the Treaty of Guadalupe IIRC. End of Mexican-American War.

The interesting historical issue at that time is that while our army had conquered all the way to Mexico city, our legislators in the Senate and House of Representatives actually did not want to annex grand swathes of Mexico for racist reasons. They literally said "we cannot expect the brown hordes to be able to handle democracy," which did have some merit because Mexico went from Spanish monarchy in 1820 to Mexican monarchy from 1821-1823. Mexico claimed it was a republic from 1824 onward, but President Santa Anna was a military man. Then the war happened in 1846, and we arrived at the position of potentially annexing a shitton of land but also a shitton of Mexicans.

In the end we only took the land with sparse population, which mostly meant deserts with Spanish misiones católicas. Mexico was allowed to be free after that point with its population mostly intact (we both lost a lot of people to disease during the war though). Ultimately the result is that Mexico ceded a lot of resources like gold on that land, as well as the people who lived in Texas (which was the origin of the war).

tl;dr: there's actually a very high probability that New Mexicans actually identify as Spanish because of history.

to be fair, and I think you're also the one making this distinction too, a lot of later urban immigrants from German countries or Germany itself depending on when they came, who also tend to be more Catholic, do actually identify as somehow related to the modern state of Germany. That's why it's a shame that Pennsylvania German/Dutch culture and identity tend to be overlooked as it directly looks to the colonial context of their heritage
