If you wan good stories and good acting: Corazon Salvaje, Cuna de Lobos, Maria Trilogy if you want to watch like real mexican culture (Marimar, Maria la del Barrio and Maria Mercedes), Betty la Fea y El Premio Mayor are mildly good because they were the first "comedy" novelas, but watch the original not any remake they all suck, in the same way Mirada de Mujer it was the first "realistic" novela and it is highly praised (However it aged like milk, so you'll find something like 90s cuture)

I understand why people tell mexican novelas are shitty but keep in mind companies make dozens maybe hundreds of novelas per year, so that makes the quality drop, nowadays they are making novelas even shorter (3-6 months) back then novelas were usually 8 months-2 years, I assure you there are good quality novelas, but they are scarce, and the better ones were usually made before 00s.
