I use ritz crackers in place of breadcrumbs to do a really nice buttery chicken fry. Take 2 chicken breasts, slice into fingers, dip in a mixture of flour, cayenne (the more the better), garlic powder, onion powder, and paprika, dip that in egg mixed with pepper and salt, and dip that into crushed ritz crackers.

I used to love Ritz crackers but the quality got to be too inconsistent and I couldn't count on them being the same every time, so I now buy Club crackers and enjoy the buttery deliciousness more than I did Ritz.
