recently i have been getting into pastry, nothing crazy but have been testing a few curd tart recipes

How'd you get started, and how did it segue into a full blown career? I started cooking myself recently, so I'm curious as hell

When i was 15 i got some job at a shitty gyro place, i had always been interested in cooking so i used that to leverage a job in another kitchen, once you have experience its easy to get jobs as the industry has very high turnover. It is really enjoyable at times and you meet very unique. but the pay and hours are shit, you get covered in cuts and bruises snd abuse your body in a 90 degree kitchen for 9-11 hours straight with no breaks, but try it out and if you like it you will be stuck in thr never ending hell that us cooks live in, good luck!

also before anyone asks i have never worked at a Michelin starred restaurant, only a few bib gourmands

I think OP is kill. Learn how to make a basic marinara sauce: heat olive oil in a skillet, add diced onion and simmer until brown, add finely chopped garlic and simmer about 30 secs ‘
(If it turns brown, it will become bitter, so turn down heat and watch this), add direct tomatoe from can, stir and simmer, season with pepper. Cook your pasta as sauce simmers on low heat. Combine. Enjoy,
