Something that many people dont know is that de Niro has always been a super shy introvert with bad social anxiety. This is prevalent in his interviews where a lot of the time you can see he is somewhat withdrawn and very quiet giving simple answers. Some interviews in the 70s you can see that he is very awkward and nervous in the way he moves.
He is a great actor though and sells the characters he plays so well that he has developed a reputation for being just like his characters, a tough guy.
My guess is being in his twilight years he just says what he thinks people want to hear to avoid any negative attention from Hollywood for times he is in the spotlight then slinks back into his private life.
