They bring in the target audience, which is generally the lowest common denominator. Audiences want big teeth and big lizards, not chickens (I wouldn't be surprised if their testers called them big chickens and were turned off). The rich people who are willing to pay for a trip to Jurassic World want to see something big, huge and impressive, and feathers can detract from that (not to mention appearance upkeep, feathers can get matted and dirty so FUCK having to literally give a T-Rex a shower to make it look nice for the tourists).
