If Star Wars attempted to show even somewhat realistic space combat then the children watching would become incredibly confused.
There are sci-fi books that describe space combat accurately. They have no place in film though, for very obvious reason - they're even less effective-looking than modern fighter doctrine, where all that matters is whether you can lock-on on your target faster than he can.
