Recently this happened with Netflix's Orange is the New Black, and the hackers did indeed release the episodes when Netflix did not pay up.

The other movies are more rumors, because Bob Iger did not say specifically that it was Pirates of the Caribbean that was stolen - only that it was one of Disney's upcoming movies. So there has been speculation over exactly which one it is. Everyone thinks it is Pirates 5 because someone supposedly "in the know" reported that it was, but right now people don't know for sure, so it still might be one of Disney's other blockbusters. It's possible they took more than one movie in the hack.

No one knows who the source is saying that it's Pirates of the Caribbean, so we don't know for sure how accurate the information is. Pirates makes the most sense though, since it is so close to release. Yeah, I really doubt they even have a complete version of Star Wars available to steal at this point, but for some of the other movies it certainly could be possible.
