Even for Vesemir you'd need someone who isn't an old man. The role of a Witcher is a physically demanding one. You can't afford to cast old actors. Truth be told, you could probably cast someone younger than Viggo and still make it work. So long as they meet the physical requirement, they can just slap on some makeup prosthetics and make him look a couple decades older. BAM, a convincing Vesemir who has both the visage and physical ability for the role.
