The Conversation (main guy is a surveillance expert, so basically like a PI)

Klute is great, but Fonda outshines Sutherland by miles.

The Robert Altman "The Long Goodbye" from 1973 is fantastic.

Fuck. Okay, what's the one they make everyone watch in film 101- it's like babby's first noir- where the first 2/3's are done entirely in flashback? Like the protag is some detective or something and falls in love with the girl he's investigating and then goes into hiding and opens up a gas station in a small town?

The Maltese Falcon if you want a noir detective film. Most of Hitchcock's great films aren't necessarily focused on detectives, but do focus on uncovering mysteries if that's what you're looking for.
