Brits didn't trust the French, and sinking rival but neutral fleets had been successful for them before, they attack and captured the Danish fleet during the Napoleonic wars too.

After Dunkirk and the end of the Battle of France, the French signed an armistice with the Germans, the Brits got worried that the French would hand their fleet over to Germany, so sailed to one of the main French naval bases, ordered the French admiral to hand over his ships, when they refused, they opened fire.

Dunkirk is an important event in WWII, but that alone doesn't mean that the brits think it's them being absolute heroes, the civilians are bigger heroes than the soldiers here.

The British beset the French with the option of becoming a neutral fleet that would moor in the French Antilles, and not leave for the entirety of the war, of joining the British against the Germans, or well, giving battle could neither of these terms be met. French admirals were mostly all in favor of joining the British, as it would keep the French navy loyal only to herself, and as the last great power of the French army, might be able to muster the might and reputation that would keep the French colonies "free" and in a pact with Britain. That said, they tried to formalize leaving with the British by getting the French government to approve of their decision, here Darlan, who was minister of the navy.

When the French government couldn't agree to what was to be done, the French admirals should to heap matters into their hands and were trying to come to an agreement with the British, except that the British then intercepted a message from the French government that another French fleet was coming "to the rescue" of the one of the Mers-el-Kebir, and thinking they were betrayed, the British fired upon the French while the French still thought they had laid down their arms. Hence the French not liking that they were attacked when a truce was being struck.

That said, I understand why the British felt it was needed, but again, the scuttling of the Toulon fleet ought to remind us the French were too proud to give up their navy anyways to the Germans.

It's been suggested that the halt order was actually given to secure the victory for the luftwaffe instead of the wehrmacht for ideological reasons. Which is to say that the air force was much more political than the army, with a much greater share of nazi party members, complete with Goering at the top.
