In Britain and I imagine other countries too the health department can fuck you over pretty good if you endanger people's health. Better to lose an evening's profit than get prosecuted.
That was just a one off documentary I think? It's still pretty good though especially as it was his own restaurant early in his career. You can tell he's up to his eyeballs in debt and has zero patience for anyone under his employment fucking things up.

BP is how Ramsay actually operates in the Kitchen, or at least, how he used to when he still had to run the pass himself.
He's still intense and pissed off, but far less shouty and over the top like in HK. He fires staff over basically nothing, and demotes them on the spot if they repeatedly fuck up. It's great viewing but avoid Beyond Boiling Point - too much filler.
