This is because normies will think "oh it seems most people agree with X" which leads to them not wanting to be apart from the norm, or to them fooling themselves into thinking that X is actually a better choice simply because more people are going to vote for that person/party.
As the election day draws closer (for US elections it's a long time away), the polling will adjust to be more real (in most cases no bias) because the pollsters need to remain trustworthy, so they cannot afford to be miles off of the real result.

I don't really buy into poll rigging conspiracies, but if you are supporting Trump I wouldn't worry too much just yet. This particular election has been shattering the normal formulas, no one predicted Trump would be where he is now, and yet here he is. The Brexit referendum is even more intriguing, as they won despite being behind in the polling. My theory is that Trump (and movements like Brexit) will do better then measured due to a sort of public shaming.
Looking at it pragmatically there isn't any reason to support Trump publicly, as you would probably face backlash and ridicule, but that doesn't stop you from voting for him privately. Say one thing for convenience and do the other for effect. I think the Dems are underestimating that aspect.
