Why did Great Britain & France declare war on Germany, but not on the Soviet Union? I thought they wanted to keep Poland free?

They never promised to defend Poland against Russia. Only against Germany. The defense treaty had a paragraph saying it would only be valid in case of a German attack. You can look up the text online

1. The Anschluss of Austria
2. The isolation of Poland in the war with Germany
3. That the Soviet Union will annex eastern polish territories without any protest from the "western powers"

That was sort of the case during the reign of Otto III. It was way more possible general in the times of the Holy ROMAN Empire which was ecumenical and cosmopolitical. As soon as HRE added the adjective "German" then the whole project really meant to represent the german power and the rise of Prussia is just a total joke

It was way too late for that and different politcally.

Hungary was liberated by the Austrians from the Turkish occupation, Poland was conquered by Prussia, then forcefully germanized during the Kulturkampf. Poles were living free under the Austrian rule and were content with the Habsburg emperors (the southern Poland, former Galicia still has a lot of positive feelings about that time, and local Habsburgs were beloved until they died out), but the Prussians were hated from day 1 by every Polish social strata.

The only saving grace of German rule was that it was better industrialized than the Austrian or Russian part, but that doesn't mean the economical situation of Poles was better. They were definitely the second class citizens, and "Szwab" and "Bamber", referring to Swabia and Bamberg region, are to this day considered insults in the former Prussian partition, a telling of how much the German settlers were reviled by the locals.
