Land is expensive and the state is actually quite densely populated.
NSW and Qld have the cheapest land and go west and north and you can disappear.

I don't see how to solve the problem about having your ownership of the property registered.
If you try to live in a national park or on crown land you are going to have a pretty bad time I think.

I don't know about best, but my country is decent. Plenty of very sparsely populated areas, untouched nature, clean water from your well. Can also be tapped into the electricity grid and use 4G until those are available.

Why hunt when you can just use a fish trap, which is much easier and reliable. Add some collars for rabbit and squirrel and some bean, squash and corn farming in the summer and you're good forever. If you're a good gathered there's also a ton of edibles.

You gotta know what you're doing if you wanna go off the grid there though. You need preparation, you need to go mid to late spring to have time to set up.
I suggest a Yurt for living accommodations.
