Because Steven is the main character and he symbolizes the bridge between Gems and Humans, so the humans he interacts with in his everyday life ought to get some spotlight for that point to get across. I admit it'd be more interesting to see the other gems interacting with humans as well though. Amethyst is a prime candidate, but the rest could use some time around the humans too. At least Pearl gave it a try last episode.
