Ours is honestly extremely fair. Everything is basically checked, I was moderating counters as a Leave representative, and I never saw anybody cheat all night. They do it with actual people, and these actual people do it as their part time job - it is their job and they get paid to not fuck it up or cheat.
The remain rep next to me was a little bitch but I ingored him all night and chatted up this canadian qt who was counting.
Also loads, and loads of people scribble stuff all over their ballot. Dicks and even quite detailed arseholes are common on ballots.

You get massive boxes of paper slips, on these slips are written the votes.
You get two boxes in front of you - leave/remain.
You put the corresponding ones in the corresponding boxes, while being checked to see if you're cheating.
Then, from those two boxes, you put them into stacks of 100.
The stacks of 100 are then counted, and then stacks of 20 which are if you have leftovers.
Then, the overspill is counted, overspill being usually just the odd 70 or whatever that are after the last 100 batch.
So the counting is very accurate because you can't really manipulate it unless you put ballots in the wrong boxes, and that doesn't really happen because you have people like me who check and make sure it's legit.
If there's a serious discrepancy (like someone colouring in both boxes, ticking both, whatever) then it's put into a spoiled box which is counted seperately.
Also, there is a tertiary system in place for if there's a debate on which box has been ticked. We got one where someone had drawn a spiral in remain, and played miniature noughts and crosses in leave. We didn't know wtf to do so we put it to the desk and they spend like 40 minutes trying to figure it out lel
