Because having sex with a whore is still having sex with a woman, which is a natural desire even if it is disordered. Masturbation, though, is a total waste; "self-abuse" is a good name for it.
The medieval theologian/philosopher Aquinas said that masturbation, in and of itself, is more unnatural than rape. That's not to say that masturbation is worse than rape, because rape is contrary to justice as well as being perverse, whereas masturbation is just perverse. Aquinas is right, masturbation is effeminate, an abuse of our own bodies, a desire that is not natural but a learned habit.

As for your wife being upset. That's because having sex with a prostitution when you're married is adultery and deprives your wife of her rights as your rightful spouse, whereas masturbation is more a sin against yourself than a sin against your wife, and only offends your wife insofar as you thought of other women while masturbating and so committed adultery in your intentions, and offends her because you are abusing your body and using on yourself what should be used on her for a natural purpose appropriate to marriage.
