Original Empire had barely 20 years, this one had another 30 on top of what remained of the old Empire. This is completely believable, especially given the fact that the First Order isn't a remnant or a fraction, but still about 3/4ths of what the Empire used to be.

As far as physical size goes, stars can definitely be smaller than planets, though they will always have considerably more mass.

It was pretty much the opposite (treaty of Versailles). Extremely punitive peace conditions that left it worse off than after WW2 and that were already heavily criticized by some on the allied side when they were drawn up. The former German state (German Empire) was also gone. The question as to who bore the most guilt for the outbreak of war wasn't clear cut and the military situation at the end was far less decisive, so Germany had hoped for reasonable peace conditions, but was instead forced into a state of poverty. Thus the "peace" treaty was viewed as draconian, like an economical occupation.
