They always knew about how powerful they would be under yellow sun radiation but it has been so long in their own universe and due to their highly sophisticated and technologically advance society, they didn't care for those powers

Remember that other than the end of Krypton, it was basically a utopia. No one needed those powers. But they DID have them at one point.

Also the yellow sun radiation doesn't directly transfer into some sort of power like he's an atomic reactor. It just enables him to channel his true power. The ability to control inertia.

We've seen them gain powers from orange and blue suns as well as yellow ones. And once Supes absorbed geothermal radiation to power himself.

In new52, He'l was an experiment of kryptonian tissue exposed to all kinds of radiation, which made him super powerful.

There was an alternate superman who absorbed quantam radiation too.

Suns have a life cycle. Our yellow sun will, at one point (when humanity will likely be long gone from the planet) turn into a red sun. Brown stars, blue stars, these were all the same at one point in their life cycle. Stars also have a lifespan that can cross multiple millennia.

Yellow suns are traditionally very young stars so at one point Krypton very much had a society under a yellow sun.

Honestly, rather than strength/speed/flight/etc. you could say that's really Superman's core power: he absorbs energy (he's absorbed kryptonite radiation, which is poisonous, sunlight, anti-sunlight, processed heat vision as solar energy...). Red sunlight isn't "enough" for him to actually manifest any abilities, his body just processes it to a net zero. Any energy he would gain from it is consumed in the act of doing so, versus yellow sunlight, which leaves him buzzing with extra energy that fortifies his body in a variety of ways. (He may look human externally, but he has a different set of internal organs, from when he was X-rayed by Subjekt-17.)

It starts with strength, speed, durability. Flight eventually kicks in, usually vision powers are the last ones to arrive, and heat vision is almost always the very last (and also first to go, usually).

Something about coming from Krypton's much harsher environment with stronger gravity and dim sunlight, so he is strong because Earth's gravity is weaker, and can do everything else because he absorbs sunlight much more efficiently somehow. It's bloody comic books, mate, this explanation isn't really any worse than speedforce or a magic ring.

On the real generally more mysterious explanations are better because for the most part you want to handwave scientific and logical bases for powers as best you can so as to best serve suspension of disbelief. So Speedforce actually is a better explanation, because it's more difficult to question.
