It's the only real choice for Dipper. I don't see him and Wendy being a thing, the show made that clear. Candy wasn't that great and ended up calling him a pussy.
At least with Pacifica they are the same age. It comes out of left field, but fun as fuck to see them gain mutual respect for each other. And I think it goes really well with an adventurer type to have a girlfriend out of his league waiting for him after an adventure.
