Changing the sound effects breaks people's immersion. They see a thing, subconsciously expect to hear the stock sound effect, then when they don't, they notice and think "that sounded weird"

It's why you still get that crackling electrical sound when a character spills water on a computer keyboard, and they still use two coconut halves to represent horse hooves.
