Because that's not what happened in the book. The last alliance had Barad-dur under siege for like 17 years or something. He had all but lost the fight when he made one last desperate attempt at breaking the siege by showing up in person to wreck shit. But Elendil and Gil-galad together managed to mortally injure him, although they were killed in the process. Although Maiar are technically deathless the bodies they create for themselves can be destroyed, which forever weakens them (Sauron had been killed twice before this I think).
Isildur was a loot ninja who took the ring off of Sauron's corpse as a were-gild because he was a greedy shit who still followed primitive Anglo-Saxon blood laws.

The One Ring also influenced Isildur, like it does with all ring bearers. Isildur is tragic because his natural greed was enhanced by the ring as well. The ring is treacherous. It brings the worst of anyone carrying it.

Did you read the fucking book? Morgoth spent all his power into making his Orc army, dragons and Angband, and corrupting the land in general, he was channeling his power through the land and slowly consuming everything.
It became to a point where he used his power so much he lost his ability to shapeshift, thus being left forever in a black knight armor. Fingolfin could only fight him because he was almost down to maiar level, which is why in the end he entrusts Sauron to continue his work.
Also like said, the "fight" pretty much consisted of Fingolfin dodgin around like a 2fast motherfucker until Morgoth stepped on him, but he managed to strike a hit on his ankle and leave him limp for the rest of his life.

Not sure how good of a fighter/mage Galadriel is but she is a 3rd generation elf, so going by powerscaling alone she should be able to shit on an average balrog fairly easily.
