I always figured that was mostly in reference to the nano-tech assembly thing rather than it literally looking like Iron Man. IIRC the early versions of the transforming effect were all about sliding and folding plates like the various Iron Man helmets and it just kinda sat on the back of his neck. It was visible in concept art and even made it into a teaser or two before they changed it.

Take some of the belts off and make them less busy and these designs are perfect.

Also since he's not a Prince of Spartax/War Veteran the helmet doesn't make much sense although I feel that Gunn can still incorporate it in a way if he gives Quill more of a Scavenger look.
That said Star-Lord's helmet is sweet and sexy as fuck, too bad Gunn refuses to use it because something about looking like Iron Man or some other bullshit.
