I like Voltron but it feels like it misses something. I think mostly in character interaction, like all of them already act like they're really close and caring towards each other but it doesn't feel sincere. It hardly gets any focus and the character development is also lacking it seems.

I wouldn't call them pointless, but I can sympathize with people wanting more out of the show. I feel TNCG can get away with being slightly unexciting because the character interactions are fun, but Rocknaldo definitely suffers from lack of imagination. It's got jokes and Ronaldo learns he can help the Gems without being a complete Gemaboo but it's otherwise uninspired.

I hope Jasper steps on it accidentally. Jasper is symbolic of a time when Steven Universe was good. Pumpkin is symbolic of memes. The episode right after Zuke's last should feature Jasper stepping on Pumpkin as a metaphor for quality triumphing over memes.

Star vs. is the closest thing to SU between your three choices, due to the overarching plot and animu/internet influences. But beware that while SU's first episodes are sappy and childish, Star's first episodes are hyperactive and filled with "YAH GURL"-tier humor.
Wander is much more cartoonish, but on the other hand the protagonist is more similar to Steven's character, since he's a pacifist who actively tries to help people and redeem villains. In two seasons, with little to no continuity, this show managed to do the "pacifist has his ideals and methods challenged" plot way better than SU ever could so far.
As for Gumball, completely different thing, but if you happen to like slapstick, surrealism and making fun of every single trope in existance, this is the show for you.
