What was up with the origami sheep that Gaff made? I have a hard time believing it's just a reference to the novel, there has to be something more since it also seems to reference the origami unicorn in the first movie.
i thought it was just something added to inform the audience who he was since he isn't the most recognizable person.
That it was visually impressive, but kinda boring. Also you wish that JOI technology will be avaliable before you die.
k is just a sheep, nothing special, like a unicorn, even though he comes to think he is, and on top of that, sheep are sacrificial creatures.
also, you can see the wooden horse has a little nub on its forehead from where a horn probably broke off

Both films are great on their own merits, the new one isn't trying to "outdo" the original, it is a completely standalone film.
But in some departments the new one is most definitely better, for example the romantic subplot of K and his virtual waifu is ten times more genuinely emotionally investing and moving than the absolutely flat romance with non existent chemistry we got from Deckard and Rachel in the original. And K is a much better and more explored protagonist than Deckard was in the original.
This is pretty much a non disputable fact.

I don't know if the generals just spoiled too much, but K and JOI's love story wasn't that interesting to me. I vastly prefer Deckard and Rachel's love story, mainly because it didn't take up such a large portion of the movie.

K was just flat and boring to me. Don't get me wrong, Deckard was also a pretty flat character, but at least he showed some emotion.

It takes up a good amount of the film, you just forgot about it because no one ever talks about it when talking about the film, while in BR2049 it's one of the main talking points.

What? When was the last time when you saw the original, because it seems like you have some imaginary headcanon about it. The only "emotion" Deckard has shown in the original is the slight confusion at the end, the entire film he is the same exact character. Hell, even Deckard in BR2049 has shown more emotion than the Deckard in the original.

Rachel was in the movie for 21 minutes (22 if you count the theatrical ending), I'm pretty sure K and JOI's story was way longer than that
