Supes has the strength and speed to remove the, let's say watertower and bring dad to a hospital, but his dad sees the extent of his own injuries an realizes it's a futile effort. Cue him grabbing the frantic Clark's arm and saying whatever variant of "it's okay, son..." you want.

He wouldn't be able to do anything because he can't fly, so he goes frantic just trying to hold on, but his Dad knows he'll die anyway so he says goodbye before the tornado becomes too strong for Clark to hold him.

Pretty much. What they should have done in this film is have Superman as the typical goody-two-shoes hero from the beginning, saving cats from trees, rescuing people from fires, stop advanced war machines, rescue villagers from hostiles and making sure nobody gets killed, catching planes, etc.
Then they could have had Zod show up and force Superman into a corner, it would have been much more powerful.

Man of Steel gets too much hate. Like most capeshit, it's not what I'd call a "great" movie, but it's not bad either.
The collateral damage and killing Zod was fine. Having a darker tone instead of just being a retread of Reeves superman was fine. My only real complaints are
1) Costner choosing to die even though superman could fly over and rescue him so quickly that nobody would even see
2) not enough actual heroism on Superman's part. What do we see in the movie? He's rescues some people here and there in the beginning BEFORE he actually becomes a superhero. After he comes out as superman, the only thing he does is "save the world" from Zod... but Zod was only there because Superman was there. So he's saving the world from a problem that only exists because he was there in the first place. It's like if a track mud into your house, and then act like cleaning the mud off your floors is some altruistic act of kindness, rather than just cleaning up after my mess.
Right, because flying off with a fucking truck, implying it with multiple telephone poles, and then flying it back without being noticed is so easy and would only take 2 seconds.
The only good thing in that diner scene is the guy trying to push Clark, and just bouncing off him while clark doesn't move an inch.

The issue is that Clark could have gone to save the dog without having anyone see him use his powers.
His dad could have taken the kid to the bridge, and clark could have run over (people wouldn't be suspicious of a young, athletic male running quickly to save a dog) and then got the dog out easily.
He wouldn't have got stuck, because he could just kick the door off, and at that distance no one would be able to see clearly or suspect a thing, and then he could sprint back, again without suspicion because he is a young athletic looking man.
There was 0 reason for his dad to risk his life.
The scene would have worked better if they had got split up, Clark gets to shelter, and they can;t find him.
Then cut to him saving the dog and telling Clark not to come save him.
After he becomes superman Zod attacks though. We see him rescuing people in the BvS montage.
It wouldn't have had the same impact if Superman was already a hero prior to Zod arriving. And when Zod made the news everyone would have pointed out to Superman instead of the world being confused and scared about "who is he?", which is more realistic imo.

Are you sure about that? I actually don't know because MoS uses a lot of flashbacks that aren't in chronological order, so it can be hard to tell with this sort of thing.

That doesn't change my point. It's still a problem that came with him. Had Superman, in a theoreticaly alternate history, never landed on earth, Zod would not have found earth and killed anyone.
I'm not saying it's Supes' "fault". I'm saying the problem only exists because he was there. It doesn't matter if it was intentional or unintentional or whether he could've done anything about it. He's still effectively "saving the world" from a problem that he brought.
