They killed them off in TFA because if the main characters aren't underdogs then it isn't relatable.

they destroyed the New Republic just so they could have a rebel faction again

they wanted simple henchmen that would all die instead of a gang of mildly interesting, visually unique characters with different weapons, ranges and styles.
Plus Johnson would have to let the audience know what they were up to, maybe some backstory on the whole 'Ren' thing when he really just wanted 2.5hrs to turn Luke into an old shitcunt.

There, now Rey and Kylo have compelling enemies to fight for the next movie and Snoke isn't introduced and then killed off without any sense of character or purpose.

Why does Disney keep throwing away the things that would make their Star Wars movies good?

This would have all been more interesting (and relevant) if they had focused on asymmetrical warfare. The New Republic is the dominant power in the galaxy and the First Order is a Neo-Imperialist rebel group with plans to sew chaos and weaken the New Republic to give a chance for the remnants of the old Empire to reassert themselves. They could try to turn the balance with a weapon of mass destruction, but I think it should be something much more subtle than another planet sized station. Imagine if there was some insanely powerful bomb hidden in the catacombs of Coruscant (or their bullshit new capital from TFA). Then what if it actually went off at some point and the Imperial remnant used that as their signal to strike a weakened Republic?

To me this makes a lot more sense than the suddenly superpowerful first order who built a planet sized, star system killing weapon completely in secret.

Indeed, it is as stupid as it sounds but the Starkiller blew up the galactic government AND the bulk of their military in one attack all due to a bunch of bad decisions that tried to de-militarize the New Republic (all of which occurs off screen and explained only in magazine clippings). All the other planets in the Republic essentially surrendered to the Order within hours, it was mentioned in passing that the Resistance literally has no more allies.

I thought the Knights of Ren were these guys.

that reminds me of the behind-the-scenes features of Attack of the Clones where Lucas talks about filming each Jedi in the arena battle separately and having a choreographer give them unique fighting styles, then splicing everything together
