Grievous' organs are his own. Sipho dyas or whatever his name was had some of his blood taken to keep grievous alive, but that blood didn't stay with him after he healed or give him force abilities. Grievous was non-sensitive and used a lightsaber.

It's specifically mentioned that grievous was not sensitive at all. He even considered it a personal failure that dyas' blood transfusion didn't make him sensitive. But his cyborg enhancements did make it possible for him to actually fight with them on par with jedi, otherwise he'd be useless with a lightsaber.
