Rowling kinda thought up the story from end to beginning.

The ending was pretty much one of the first things that even existed, sitting in a floppy school writing book for years. Since Hermonie is her self insert she first made sure to pair him with the in her eyes most fitting character which she would take.
The story was then constructed around that and when after personalizinng the characters it became apparent that the obvious choice might have been the better one it was too late to rebuild that.

The movies did not develop on things properly, with alot of Ron and Hermione not having enough meaningful moments and when they did, Ron was a fucking faggot.

On top of that, David Radcliffe and Emma Watson had more on screen chemistry than Rupert Grint had with Watson. Probably a result of Grint being a shit actor and why of the 3 leads he was the only one not to have a career after Harry Potter.

Hands down the dumbest decisions the films did, along with how Harry vs Voldermort went.

I never had a problem with them, never cared much about shipping in HP, but I do have issue with Harry hooking up with Ginny.
It just comes out of nowhere, it's so weird. Back when I read the books as a teen I already found it weird, and re-reading it last year cemented that. It comes out of left field, it seems a bit of a weird choice to have it start as just a phisical attraction (from Harry's personality, a lot of people before expected whoever he gets with to connect more on a emotional level first). But then again Books 5 an 6 were a big turning point on Harry's personality, in my opinion for the worse, but I guess I can't call it out of character when it happens in a time the character is going through severe changes.

One thing I noticed in a re-read sometime ago though is that in the fifth book it really looks like Rowling was setting up Harry and Luna. If not as romantic partners, at least to have a much bigger connection/friendship than they end up having in the sequels. I wonder if that crossed her mind at some point or if it was unnintentional.

They deliberately took some of Ron's best moments to make Hermionie a bigger deal. I think it was deliberately so they would grab youg girls with Hermionie and boys with Harry.

Either way the movies were too much story in too little time. And after the 4th or so they just gave in and leaned on the crutch of expecting the audience to have read the books.

They werent wrong to do that at that point either. That shit show wasnt going to go any better without major rewrites of a story they havent seem the end of or way more movies.

Could have been a kick ass show though. HBO style 12-20 episode seasons but for high school kids instead. With media moving online there might be a platform for such a show in a few years.
