I don't think they appeared outside of ROTS, and even then just in distant background shots. The only reason I even know what it is is because the ROTS visual dictionary included a picture of it.

It's okay. There is a little tonal dissonance between it and the Star Wars comic book series that begins shortly after it. Luke is much more mature in this book and in Weapon of a Jedi than he is in the comic. Though I chalk that up to his loss to Vader shaking him up.
So was a lot of this art made after props and whatnot were produced? Because I know that droid was originally going to have legs but for whatever reason they ended up with only the upper half of the droid's body which made them place the computer console in front of it.

It's weird. Seeing Yoda fighting Dooku was ridiculous, but there's just something epic about seeing him fight Sheev; especially in the TCW finale.

I agree. For emotional impact there is none better.
I also really like Maul's duels with Viszla and Sheev in the Maul's Empire Arc. And his final duel with Kenobi was Arakawa-tier kino.

Well, it can be a little tricky. Obviously when he was making concept art for a film, it was before the props for that film were made, but when he was doing, say, Empire or Jedi, props and such from ANH were already around. Some of his art for those movies includes TIE fighters that he's very obviously painting while looking at a toy TIE fighter. Where as his original art that the props/toys were based on looked a bit different.
Maul v. Viszla was amazing. The fact that CN aired a savage pun intended decapitation was awesome.
