I love Kafka, but Metamorphosis would be atrocious if it was adapted into a movie. Kafka himself didn't even want the ungeheures Ungeziefer illustrated in/on the book

It also doesn't have a real plot. Some things just don't work as film

I wouldn't mind seeing adaptions of really gross extreme horror novels, something that would upset people. Maybe something like The Teratologist or Population Zero (which has a tree-hugging vegan who ultimately ends up going postal in a woman and child shelter).
