As big as he is and as loud as he can be, he is capable of being stealthy. It's one of the very first things he does in the first movie: he sneaks up on an angry mob.

Is the fight in his swamp? Does he have access to onions?

I think he could defeat the punisher if no firearms were allowed. Punisher can still use knives and traps. Still, I think Shrek would win.

Shrek is a pretty good tactician in his own right, and has uprooted large trees which could mean is strength is in the 20-30 ton range so he is like a Venom infused Bane without the rage. Unlike Bane though he is also really fast and can outrun dragon fire.

He has shown some immunity to magic too.

Based on Shrek's muscle mass and height, he can probably bench about 2 metric tonnes, several times more than Rogers.

Shrek is a genuine hero. Jack's sword would merely bruise him or knock him out.

A lot of Shrek's tactics rely on teamwork and diversion though, if he's only with donkey as said then there are some limitations on his abilities.

Still, he's versatile, pretty acrobatic and speedy, and very strong.

We also have to factor in how being in his swamp would grant him the home turf advantage, and the general stench of the swamp combined with Shrek's general odor would most likely wear down the will of his opponent by some degree.

Before we just go around willy-nilly naming characters he could beat, we have to determine how exactly he fares as far as strength, agility, intelligence, and combat experience go.

We need to rank him in a range compared to the same abilities and powers of other cartoons and capeshit heroes/villains.

Being stealthy isn't that hard. Just move in places with low visibility and move very slowly, avoiding unnecessary noises.
