It's now a generic soap opera with occasional cgi dragon scenes, and this works just as effectively for drawing in and retaining an audience.

This. In the books she's getting fat from drinking too much and her looks are fading with age by this point. Since my guess is she probably refused to get fatter for the role and most people wouldn't have noticed that it was for the character anyways, I'm fine with how they handled that theme in the show.

Her acting is so good that I don't mind the wig or her eyes being blue instead of green. Same goes for Jaime and Tyrion having brown hair, or Robb having brown hair. The acting outweighs the appearance every time.

What is Cersei even going to do in S8?

Cersei's character is handled better in the show. And that's partly because of Lena, in earlier seasons she made Cersei appear occasionally sympathetic, and there were scenes in S1 with her and Robert talking about Lyanna.

In the books there's hardly any redeeming factors to her character (which is fine in of itself, but makes for a less interesting character sometimes).

Why did they change it?

I sympathise with book Cersei. She's clearly mentally ill and was raised to believe that her sexuality and beauty were the most valuable things about her.
