Because the joke is not that they're doing blackface or playing a retard, but that they're taking extreme measures in order to garner critical acclaim. In RDJs case it was literally changing race in order to secure yet another oscar; and Ben Stiller's case it was trying to throw himself into anything which would avoid him being typecast as a mindless action star.
