Jaques Cousteau was seriously based. I watched The Undersea World of Jacques Cousteau when I was a kid. I'm not sure how much Steve Zissou was modelled after Jaques other then his look and the fact the he explord the ocean. That being said, Life Aquatic is a great movie.

Saw Seu Jorge live recently, he's incredible and his other music is all fantastic too.
It's far and away my favorite of his movies, but TGBH is tighter and more in what we'd recognize in his style now. It seems too polished to me though, in some ways I find more to appreciate in the life aquatic, his style isn't as front and center, it feels more complex. TGBH feels like a good entry point to what Anderson's style is, whereas life aquatic is a hidden jewel one should arrive at. I'm just very fond of it.

I also have an emotional attachment to the movie though because my dad and I used to watch it all the time. TGBH does definitely seem like a tighter film but this one pulls on strings better than TGBH does

I agree with your last sentence. It also hits more mature tones. I like Zissou's character a lot because at his core he doesn't really know what he wants, and I feel like that made his catharsis at the end even more powerful and unforgettable for me. I'll never forget the scene where he meets the shark. "I wonder if it remembers me." Still makes me get all misty
