Vizzinis is legitimately very smart and clever. He was the mastermind of the group for a reason. A lot of movies have the "smart" villain die in a way that delegitimizes their cleverness but Vizzinis proved he was clever despite the goofy bragging. Great character, great movie.

just my head canon, Vizzini was dead before the wine was even poured and Westley was just waiting for him to keel over.

He didn't see the big picture and ignored some crucial details. He totally forgot that in addition to beating Fezzik and Inigo, he's just seen the man in black penetrate the conspiracy, chase them over open water, and then catch himself like a spider on the cliff wall.
Westley was the "type of man" who would never offer a challenge he had any chance of losing.
I always thought this because after Vizzini inhales, Westley says "it's odorless." If it's odorless, what's all the sniffing about?

His body was worthless and he was finally stripped of all physical resources. (Buttercup being useless in the fire swamp was important setup) That scene, he was forced to take the biggest chance, using only his mind and facing a legitimately evil person. However, in each of the previous battles, Westley was technically at the mercy of his opponent. Inigo after his oath, Fezzik at the ambush, and Vizzini could have easily slit Buttercup's throat. In each case, Westley guides the enemy into a situation where Westley has the advantage, and the bluff is no different, although riskier. The real question is, what was Westley's plan when they got captured outside the fire swamp? IMO they wouldn't have shot Buttercup.

There was no poison. Westley was going to stab him while he was distracted but he died of laughter first.
He thought he was in charge.
He didn't cheat.
Vizzini simply hadn't considered the possibility of acquired immunity to the poison. If he had, he'd have realized that both cups were poisoned.
