Princess Monoke, it's the only one that really separates itself from the rest.
The two best are Mononoke and Spirited Away, with Spirited Away being slightly better

Regardless of quality, Spirited Away is the most relevant and the most likely to come up in conversations about Ghibli so start with that. Princess Mononoke and Graveyard of the Fireflies should be next

I actually just watched Grave of the Fireflies and it was such a sad but lovely film.
In terms of pure imagination Spirited Away is fantastic.
My favorite is Castle in the Sky, but you could probably start with Castle of Cagliostro. Not technically Ghibli but it feels like one

My Neighbor Totoro. That was Ghibli's big break through in the West and the movie most people saw first when they were kids. It's still their most popular, iconic, and accessible movie. Watch that and then watch the rest in order.
Disregard people saying super late in the game stuff like The Wind Rises and Howl's Moving Castle.
Start with Nausicaa. Even though it's not technically a Ghibli film, it's the first Miyazaki film that defines his distinctive style (Cagliostro is good, but not representative of later Ghibli works
And honestly, just watch all of them in chronological order, minus Ocean Waves which was a direct-to-TV movie. Even the bad ones like Tales from Earthsea and the raccoon testicles movie are worth watching once. And don't forget to watch The Red Turtle which is a French co-production with Ghibli, and Yonebayashi's new film with Studio Ponoc.

The movie turns to shit when she walks up the steps to the palace. It loses all pacing and the plot becomes convoluted. Transforming the main antagonist into the cute animal comic relief character is i think something that has never been done before and just such an absurdly bad choice. Sophie's transformation is never resolved. The romance plot is terrible. The pacifism is simplistic and juvenile compared to how it's handled in Mononoke or Nausicaa. The setting is cool but that's it. I think Ghibli adaptations of british novels; Marnie, Arrietty, Howls, all suffer from being culturally isolated from ghibli-ness. Ghibli films are intrinsically Japanese, in the same way that Over the Garden Wall is intrinsically American. Some of that cultural identity is just left behind when the source material is British. I think more romantic European setting Ghibli films like Nasu summer in Andalusia, and Porco, translate better.
Hayao didn't even want to direct it, it was slated for Hosoda who left at the last moment. Miyazaki was retired. It's the same situation as Jackson taking over from Del Toro on the Hobbit.
It's like, not bad, but for a Ghibli film it's pretty bad.

Ghibli films are overrated as fuck. Princess Mononoke and Spirited away, and My neighbor Totoro to a lesser extent are the only ones with good replay value.
Nausicaa could've been great, if they removed all of the exposition and did a couple of shots from her point of view on the glider thing.

The Wind Rises is just Miyazaki jerking himself off to more aeroplane shit. The character's are all forgettable and hard to give a shit about. He should've just focused on the engineering/political/business aspects of making aeroplanes during WWII.

ehh i mean ultimately they are children's films so the fact they're worth even one watch is pretty special. Personally i'm looking forward to having kids and watching the dubs with them one day. I remember watching Mononoke in a big cinema when the dub came out, my first anime, and being just blown away by it. The art is their greatest strength though, and on that level that are absolutely rewatchable. Films to smoke to.
Castle in the Sky is one of the best paced films I've ever watched
