Some studios consistently put out high-quality shows, and some studios consistently put out shows with really shitty animation (e.g. Studio Deen, Studio Gonzo). I think it's safe to say an adaptation of your favorite manga would do much better in the hands of MADHOUSE than Studio Deen.
And I don't know if Gainax uses in-house animators, but their track record is so stellar that I think worship is maybe warranted.

They do have in-house staff, just nowhere near enough to produce something on their own, unlike Kyoani and Ghibli. Studios like Shaft and Ufotable have their own idiosyncracies even if they use a lot of third parties.
