As much as her death is a very easy retcon, I am not sure Lucasfilm would want to do that a SECOND time in a row, especially because they've actually been pretty vocal about disliking retconning character deaths in the past (Maul came from Lucas, and Filoni himself argued against it, but Lucas was adamant they would make it work), and they likely only made an exception for Phasma because they saw how wasted she was in TFA and wanted to give her at least one action scene.

Lucasfilm already did the only thing they had to do to make sure KOTOR doesn't become canon. They declared the game not canon and that's that. Recreating the era in their own vision, more in line with how they see it should be done, is not the same as bringing KOTOR (the game) into canon.
