Basically the votes are counted on a per state basis

So if you win a state by 51% you would receive all of the votes for that state. Theoretically you could win barely enough states with a 51% margin and lose every single other vote and it wouldn't matter.

In bigger population states like California, this can lead to a lot of votes "not counting"

The point of the electoral college is to ensure that enough people across the entire country support the candidate

As an introduction read The Federalist Papers.

Essentially it is a system designed to prevent a democratic tyranny based on areas with a larger population. The fly over states in the USA are not as populated as a state like California. If the president were chosen based on population people with California political leanings would hold too much power over areas with a much different viewpoint. It acts as a balance.
