I personally like to marinade steak in a mixture of crushed/chopped rosemary+thyme, hot red pepper (fresh or dried), and garlic. In a small sauce pan melt and heat some butter (or olive oil), and take the chopped stuff and just lightly caramelize it before putting it on the steak with salt + pepper. Let it sit overnight or a few hours, steak should be nicely infused with flavor. You can BBQ it up just like that, don't need to remove the marinade.

The key is frying the herbs just long enough. Too much kills the flavor, too little and you don't develop a more complex one.

I've also infused olive oil with rosemary + thyme and just used that, works out ok.

Its a 2yr minimum degree with options for another year in baking and pastry, one in seafood and one in ethnic cuisine. We have people go through everything and move to new york or chicago. Other just do the two years and work their way up at spots around town.

If you've been line 7 years, you should blow through the basic 2 year courses. Unfortunately you can only test out of pre-reqs.
