Speaking of Castlevania, why isn't Dracula a villain more frequently in anime/games? Like, of the top of my head I can only remember Dracula in Castlevania and Hellsing, which is weird when you consider it's a very popular and universally known public domain monster.

Dracula is mostly a movie monster, with his most iconic appearance being not-a-little cheesy these days. It's much easier to just use vampires instead of an actually named, specific one. That way you can have different motives for your villain.
