Headbutts are the most personal attack you can perform on someone, and if the manga is doing it's job and is making you at least partially self insert as the main character, the victory feels more satisfying.

It's not just that.
It's the sense that the hero is spent. All his fancy beam spam, all his oxygen in the muscles. all his O MY RUBBER NEN is used up. He is reduced to the most basic human because his opponent took him to that limit nobody else could.
Where at his peak, the hero needs to win the final battle with one last basic blow filled with every emotion leading up to that point.
