The xbox one version is the same visually. A native 720p resolution, with the same textures, texture filtering, and draw distances as before. The one key improvement is in that framerate.
So since I played it on my 360, why would I drop 300 dollars just to play it again when it looks the same just with more stable 30 fps /w drops when I want 1440p and 60 fps?

I appreciate the sentiment, but cartridge based systems even if neglected and in poor condition will probably still be functional with minimal maintenance for as long as someone keeps one around. Disc based systems though, not so much. In 10 years time it may be a novelty to have a functional 360 or PS3, they age like peeled bananas.

I used to have a GBC that broke any cartridge you put into it. The games would work fine for maybe a week or two, and then permanently freeze on the bootup screen with that glitchy Nintendo logo.
The batteries were fine, and I don't recall anything obvious like scratched contacts. Fucked cartridges would remain fucked on any Game Boy you try it on. What was the problem?

Could be that the GBC is damaged causing a power surge in the cartridge that could be perpetuated until some of the cart's electrical components are damaged, in which case it'd be irreparable. This would only effect games with battery backup, Zelda games, Pokemon, Mario Deluxe, anything that actually has save files. More than likely they cartridge slot might just have something in it making the games dirty. Give the contacts of both your system and games a good clean with a q-tip and some alcohol, gently, don't scrub it to death. It'll probably start to work again after a few cleans.
