I wanna make a paladin type character, Or a magic and melee character Are these any good? Whats the best way to go about it? Tried a two hander melee class my first playthrough, It was pretty fun but not much variety. Also heard you get fucked out of huge sections of the game if you don't do some obscure sidequest near the start playing the ps3 version
Also heard the start of the game is a bit of a slog in general. When does it get better?

The classes aren't traditional in a way, so it can be hard to work out what you want just from looking at them. The arcane knight, for example, has a heavy focus on traps and perfect parries. The best thing to do really is just try each of them out for a few ranks, see what you like

Once you reach level 10 and get to Gran Soren, you can change your class at the inn. Since you want magic+melee, you'll definitely want to try out the Mystic Knight class, which has swords/maces, staves, and magick shields. Lots of spells based around enchanting your shield with an elemental spell that will trigger each time you block an attack, along with some weapon buffs and making sigils on the ground. Worth trying a bit of everything to get augments from other classes and break up monotony.
Sidequest is after you cut off a hydra head, say you won't accompany the group to take it yet and head back to the first village and talk to the chief. Then you can just head west a bit past the encampment and follow the marker to do that sidequest. Granted, you only miss out on like 2 other sidequests if you miss it so it's not a huge thing if you don't do it.

Mystic Knight/Fighter is the best classes for paladin but good luck getting armor for the aesthetic (Unless you're not playing Dark Arisen and are playing the vanilla game, then the Hawk armor is perfect) Otherwise you'll have to make do with just average armor because the high tier stuff looks evil as shit.
Gryphic armor does look kinda Paladin-y (Though ditch the Gryphic helmet, it looks stupid as shit. ALWAYS Go for the Barreled Helmet for a Crusader look.)
Once you kill the Dragon near the end of the game you'll finally be able to access Paladin-looking gear (Also if you want to have a sword, make sure you kill the Dragon with a sword equipped to get one of the best and most paladin-esque powerful swords in the game) and stock up on Harspud Sauce and Juice to give as presents to Mathias the trader who sits right outside the entrance to the Greatwall in the Barta Crags.
At High Affinity he will sell you the Divine Surcoat which looks Paladin as fuck if you combine it with -
Silver mail scale undershirt Gryphic Gauntlets Gryphic Boots Barreled Helm/Circlet or any cool helm of your choice
If you choose to be fighter use the sword Dragon's Dogma and the Orilux Shield (The Orilux Shield and the Barrelled helm can be bought from Caxton the Armorer after completing TWO of the Wyrm Hunt Quests which become available after reaching Gran Soren and completing A Matter of Myrmidons)
If you are going for Mystic Knight use Dragon's Dogma / Angel's Sanctum and use Knight's Honor until you kill the Dragon. Angel's Sanctum matches well with the Gryphic set and has nice stats as well. You can get it from Mathias as well after reaching high affinity. Just keep giving him Harspud Sauce/Juice until you hear a jingle and he starts blushing, which indicates any character with high affinity.
With either of these sets, you should have decent stats and actually look somewhat like a Crusader/Paladin. Most of the high tier armors look evil as all get-out with spikes and stuff.

Mystic Knight is literally Paladin but with actual fucking spells and not just tacked on shit to support their melee badassary
Magick Archer can also focus on melee if you wish, with skills like Sunflare, Shadowsnare and Immolation, setting yourself on fire whilst you climb on top of shit is pretty efficient and is the only efficient way an MA can deal with golems.

Mystic Knight should be your starting class then. There's tons of vocations to choose from and it's worth upgrading a few vocations to get their bonuses to build your ultimate class.
Get Dark Arisen on PC if you can. The experience is tons better with a proper framerate and the BBI expansion.

Enemies in BBi are largely weak to ice and lightning. Holy is the boss killer though.
That said, Mystic Knights really take a dive in effectiveness on BBI because enemies actually have defense there, and split damage means having to punch through two separate damage checks. Pure physical MKs actually start to wreck shit on BBI, and the MK lvl3 weapon is even pure physical.
