I really liked FFXIV's fishing, spent hours losing myself to it and the moment I hit level 50 (max at the time) i just dropped the game entirely, because that little element was the most fun I got out of it

what made it engaging? I remember in FFXI it was pretty mundane

Probably the correct answer. Not only was it relaxing as fuck, it was also very useful in game AND helped you explore the world through wanting to find that fishing spot with whales.
