Yeah but it's also a GPU-centric PS3/360, rather than CPU which is outdated and is what everything runs on. Nintendo was going for the long game with the Wii U, but then they chickened out so all we have to show for it is Zelda. But somehow I doubt the Xbone and PS4 can run it, if even PC can't keep up on some levels since it's GPU.
Keep in mind, The Wind Waker came out the same year Morrowind did and that looks about 3 gens behind Wind Waker. Also, notice how we've only now, 14 years later still learning about things like the Kalle Demos forest water Easter egg. Why didn't anyone ever do this on PC before?

Of course, we've seen this grass since the very first footage, but it was only about a week or so that I randomly started thinking about how they made the grass in the game work. And this led to a revelation.
To be blunt, it's impossible for the Wii U's CPU to move that many blades of grass at once. They have to be doing the physics on the GPU.
It was upon realizing this, that I began to recall quotes by Nintendo staff (Iwata...? Forgive me for the lack of links to prove my memory, but I believe my memory should be mostly correct)...Around when the Wii U was first coming out and its release flopped, I remember things being said like:
"The Wii U's architecture is actually being defined by the in-development Zelda title in a lot of ways"
"It is taking time for our developers to get used to the new architecture in which many computations are done on the GPU instead of the CPU'.
At the time, this seemed to be little more than buzz talk and excuses. But I think this grass and the physics engine in the new Zelda is what they were talking about. They were developing a new physics engine that would run on the Wii U's GPU.
The tech to do physics on the GPU has been around for some time. But Nintendo is probably the first to use it in such an artful manner. Despite the West generally having the upper edge in 3D technology, Nintendo still somehow manages to find potential for innovation where others do not.
Zelda: Breath of the Wind will likely be the only Wii U title that utilizes this new physics engine, but I think no one will disagree that it is all the more beautiful for it.
EDIT: Here's an article where Nintendo staff are talking about the Wii U's CPU and GPU that vaguely resembles my memory.
It's because Zelda has a nice artstyle which most modern games don't. Technically PS4/Xbone could run the game because they are objectively stronger than the Wii U.

Me thinks they are talking out their ass. Hardware specific API makes a big difference as does quality design. So much really comes down how well its made. Its why TES games run like balls compared to game that look several times better.

PS3 would struggle desu senpai, it has far less RAM than the Wii U. 256MB video + 256MB main, minus however much the OS uses, compared to Wii U's 1GB unified RAM untouched by the OS (OS uses the remaining 1GB to make 2GB total).
Open world games are RAM eaters. It could probably be optimised for PS3, maybe, but the RAM restrictions would be obvious.
PS4, on the other hand, could easily run it without any optimisations whatsoever, and at a higher frame rate and resolution.

Videos didn't show anything with Twilight Princess. We got a shitty trailer that hinted there was a huge wooded area (which turned out to be a lie) and you could fight on horseback. Even back then, I was calling them out, saying the trailer had no gameplay.
On the flip side, they let people actually play Breath of the Wild at a convention and dared people to explore as far as they could. And still people only uncovered 15% of the map. But more importantly, they showed that the game is total free roaming and has almost no story.

Also to answer OP's question; yes the Xbone and PS4 could easily run BotW, its not a super intensive game, it just looks gorgeous thanks to proper use of lighting and other technical wizardry.

In any case, ambient occlusion and anisotropic filtering are hardly intensive, the foliage on the trees is nothing to write home about, and the draw distance, while impressive, means little when there isn't much to render except miles of grass and rock. The castle walls are nice, though.
I have no knowledge on anything and am just basing this on an assumption, but I think the gamecube's extremely tiny motherboard and simple architect is what granted it the few minor optimal things it did over pc's
