500 is enough, newer GPU's have become very power efficient than older ones. I've had a 750w power supply for years because I needed it back when I got it. Its total overkill for my current setup because power requirements are so much lower.

This isn't always true. When running dual or multiple gpus, the blower style cooling is more efficient with the cards being so close together.

I recommend evga for the 1060, they are probably a little pricey compared to the others on sale right now on newegg but their warranty and customer support has been great in my personal experience.
However, you probably cannot go wrong with other choice brands, friend got a gigabyte 1060 and its working just as good with no issues.
