It can be a lot of games, you just need to impose rules on yourself/find modznif the game is too eazy.
Rpgs and history/war games might do it for you. Generally though, simplicity can be fun and deep because the goal is always trying to find simple and effective means of doing something.
A game with incredible ambience and unique settinge and mechanics should always be stimulating. Its just too bad those are difficult to find nowadayz
